What is Sima?
Fermented Lemon Soda
Sima is a low-alcohol, naturally fizzy beverage traditionally enjoyed in Finland during Vappu (May Day). It’s considered a type of mead, though it’s much lighter and quicker to ferment than traditional honey-based meads 1 2 3.
Ingredients
  • Lemons (juice and peel)
  • Sugar (white, brown, or honey)
  • Water
  • Yeast (fresh or dried)
  • Raisins (added to bottles to indicate fermentation readiness)
How It’s Made: Boil lemon juice, peels, and sugar in water. Cool the mixture and add yeast. Ferment for 1–2 days at room temperature. Bottle with a few raisins in each bottle. Refrigerate for 2–3 days. When the raisins float, it’s ready to drink!
